Nothing is added, aside from the occasional touch of SO2, depending on the wine and style. The grapes they work with are grown without using synthetic pesticides, herbicides, fungicides or fertilisers. Here, the Trousseau and Zinfandel grapes for the 2021 vintage were 100% destemmed and fermented
